Open VPN (iOS) while away from router

Sorry, I am a solid novice but I have been searching for this answers for some time. I have OpenVPN installed and configured on a Linksys wrt3200acm. It is fully functional and working fine. I also have openvpn installed on my iOS devices and it too seems to work fine. My question is how much security do I really get when using openvpn on my iOS devices when I am traveling. Is there documentation available that describes how this type of vpn connection works.

Traffic between your VPN client and VPN server is encrypted, that is all there is to it.
