I would like to know whether it is possible to run Remote Desktop via OpenVPN so that my encryption level is raised from the 128bit that is provided via Remote Desktop?
Is there other client software available that would provide me with a remote desktop view of my remote server, other than Microsoft Remote Desktop?

yes, you can connect to a remote desktop server over openvpn, no problem.
note, your firewall on the machine running remote desktop must allow this.
when you look for other remote desktop apps, use the term VNC in your web searches
