I have OVPNAS setup and it seems to be working for the most part with a few issues I still need to clear up.

One issue is that although I can successfully connect to statically addressed clients through the VPN, I cannot connect to any client that is assigned a DHCP address.

The network default gateway is also the DHCP server.

Any ideas why this behavior and how to resolve it?

Would you please detail your network setup so we can have an idea on how your setup is like (e.g. Are you using Layer 3 or Layer 2 routing, what IPs are you trying to reach, what IPs did you assign to your clients, etc?)
