Certificate signing

Hi yall. New to the more advanced customization of creating certificates. I’m a little confused about how time zones and locations work. I am setting up a TAP server at a family location in the UK and I am based in the US. The purpose of course to bypass some geo restrictions with certain websites and apps. What would you recommend I configure mine as? I don’t want the connected client to “give itself away” by having a US based time zone. Any tips or articles would be appreciated. Thanks so much!
