Netcomm NTC 140-02 4G LTE Router

I am considering creating a VPN connection between a Netcomm NTC 140-02 4G LTE Router (to start with) and a virtualised server at work.
The Netcomm LTE router mentioned has options for an OpenVPN server list, a Client list and an OpenVPN P2P list.
I am looking at setting up a test VPN tunnel between the Netcomm NTC 140-02 4G LTE Router and a home server to test the connection.
The issue is that due to the lack of options around Dynamic DNS on the LTE router and some locations a CG NAT interference in remote accessing the router.
Can an OpenVPN connection be established, maintained and transverse both a dynamic IP address and in some locations a CG NAT?
