I must have missed the memo, but the latest Access Server available in AWS Marketplace is from 2020 July (2.8.5), with base ubuntu 18.04. Will there be no more pre-bundle images? Is the only way to have a recent version now a self install, BYOB licence?

We are working on newer images. You can always update the one that's online now to latest Access Server version with apt upgrade openvpn-as.
