Use different encryption options on client and server end

Hi, I develop VPN applications for clients, and they're interested in adding a feature to lower/increase encryption standard based on user requirement, i.e a lower setting would mean using something like aes 128 whereas high would be aes 256 cbc
However how can I allow for multiple options in the server end
