Voip confidentiality

Hello fellow admins and users.
I'm planning to use OpenVPN to conceal voice traffic between two sites. The OpenVPN server will be hosted in the Amazon AWS cloud.
Something I'm not sure and maybe someone here can clarify:
In my Voip setup, phones dial each other "directly": call setup and voice payload is not being handled by a proxy (eg. Asterisk).
In the phone i will "dial in" OpenVPN-released IP's like 10.4.0.2
Will snooping tun0:
still show unencrypted traffic?
