Server Ignores Conf Changes

My server certificate expired. These are the steps I have taken to renew it.

1. Renewed certificates ./easyrsa build-server-full vpn.newplatform.com nopass.
2. Updated server.conf to point at new certs and restarted openvpn.

However I see in the logs:
2024-02-20 20:47:17 VERIFY ERROR: depth=0, error=certificate has expired: CN=vpn.oldplatform.com, serial=231295053448772378367271705252949776255

I also tried doing a renew, but still validates against old certificate. Is there something I am missing? It's like the server ignores the server.conf changes.
