Snoop on my client traffic

I want to control an OpenVPN client such that the traffic between the vpn and internet is visible to me. How is that possible ?

If you operate the VPN server and provide a gateway to the internet for your clients then you can see all your client traffic.

Not even most likely. they absolutely DO sniff HTTPS traffic. They use a MITM attack at the ISP and route the traffic to a computer that replaces the encryption in route. They do NOT do this with all traffic.
