Want to prevent certain applications from using VPN

Steam does not allow the use of a VPN, so I'm interested in having the VPN tunnel around Steam and certain games. How can I go about making sure Steam does not utilize my VPN? I also want to do this for BitTorrent because it severely impacts my downloading speeds.

identifying what the application is for packets as they are being sent through the tunnel is very very hard to do. if it is a specific port number (TCP or UDP) then it might be easier and you could just discard those packets in the filtering rules.
